For the sharp cheese lover! Aged in our cave for 6-7 years, this is a special Texas treat. The long aging time deepens the dark golden color and gives this cheese a lot of complexity. It is very rich and surprisingly creamy for such an aged cheddar. Pairs well with dark stout or bold red wine.
