After separating the curds and whey in our cheesemaking vat, we soak the curds in a stout, dark beer to create a deeply flavorful cheese with a tart tang. Our tradition dictates that we always use a genuine Texas beer – we use Aceite Crudo (roughly translated meaning crude oil) an 11% Russian Imperial Stout made in Houston by Spindletap Brewery! Mild and creamy with malty sweetness and flavors of buttered toast. Think Mac n’ Cheese!
Redneck Cheddar is aged 2-3 months.
