Greens Creek is a Gruyere style, smooth with a great complexity of flavors. Naturally sweet and mellow with a hint of nuttiness. One of our seasonal cheeses, we only make this when the cows are grazing on lots of green spring grass! This is a great melter and is wonderful on french onion soup and makes the perfect melty grilled cheese.
Greens Creek is aged 12-18 months.
