Fat Tailed Tomme
Named for the sheep in our flock, the Awassi are known for their high milk production and fat tails. Our take on a manchego style, this delightful rich cheese has leafy green sweetness and milky notes with a clean complex finish. The natural rind is rubbed with olive oil which lends a hint of fruitiness.
Fat Tailed Tomme cheese is aged 3-6 months.
